This post was originally published on January 29, 2017, but the Super Bowl is tomorrow so I thought you could use some easy beer cheese. 

 

So I was trying to relax at the nail salon while getting an overdue and much deserved manicure and pedicure.  I had a glass of delicious red wine in my hand and reached for some beer cheese when I’m abruptly awakened from my dream like state with a complaint from Lisa.  You have never put this beer cheese on your blog.  What?

I have put Lisa’s beer cheese recipe on this ridiculous website, but I can understand the oversight since it wasn’t in the title.  It was actually the first recipe I shared when I launched my new look almost two years ago.

In order to make Lisa eat her words happy and because I absolutely cannot get excited about either one of the teams playing in the Super Bowl this year, so I’m going to be faceplanting in some beer cheese only coming up long enough to watch commercials and hope Tom Brady gets sacked, I share with you two versions of beer cheese – Lisa’s original and pimento.

Yes, from the girl who said she doesn’t like pimentos because she doesn’t like olives.  I’m looking at you, Lisa.

Easy Beer Cheese – Two Ways

Ingredients

  • 8 ounces cream cheese softened
  • 4 ounces extra sharp white cheddar cheese shredded
  • 2 - 3 cloves garlic
  • 1 -2 dashes Worcestershire sauce
  • 1/2 = 3/4 cup beer

Instructions

  1. Combine cream cheese, cheddar, garlic, and Worcestershire Sauce in the bowl of a food processor and pulse until combined.
  2. With the food processor running, slowly stream in beer until desired consistency is reached

For a Pimento Cheese Version

  1. Combine 8 ounces of pimento cheese, 4 ounces cream cheese, garlic, and Worcestershire sauce in a food processor and pulse until combined.
  2. With food processor running, slowly stream in beer until desired consistency is reached

NOTES:

  1. I used my Irish Red Ale home brew for this, but you can use any beer that you want.  Just remember that it is going to taste like whatever beer you use, so be careful of anything too hoppy or with flavors you don’t want in your cheese.
  2. Serve with pretzels, chips, bread, pita, vegetables, or any other kind of snack you like

Jalapeno Pale Ale Chili is an adult version of a delicious winter food perfect for sharing with friends while watching some football games.

I know that this isn’t the first time you’ve seen beer in chili, but it’s classic for football games and beer brewing around these parts, so I’m popping in real quick to share some with you today.

And I have a surprise!  Not only am I sharing some Jalapeno Pale Ale Chili for all you football festivities, I’ve teamed up with a bunch of bloggers to bring you a collection of everything you could possibly need for the next round of playoffs and into the final Big Game of the season.

My beloved Carolina Panthers didn’t have as great of a season this year as last year, so we’re out of the running.  I hope your team wins and at least you can enjoy some delicious food while you sit on the edge of your seat for what I hope is a great last day of playoffs and final game of the season!

Jalapeno Pale Ale Chili

Ingredients

  • 1 tablespoon butter
  • 1 green bell pepper diced
  • 1 small onion diced
  • 1 - 1 1/2 pounds ground chuck
  • 1 cup beer
  • 1 32 ounce can crushed tomatoes
  • 1 15 ounce can tomato sauce
  • 1 15 ounce can dark or light red kidney beans
  • 3 tablespoons chili powder
  • 1/4 - 1/2 teaspoon ground cayenne pepper
  • 1 bay leaf
  • 1 teaspoon salt
  • couple of dashes of hot sauce

Optional Toppings and Sides

  • Chopped onions
  • Shredded cheddar cheese
  • Chopped green onions
  • Sliced or diced jalapeno peppers
  • Sour cream
  • Saltine crackers
  • Fritos
  • Tortilla chips or scoops

Instructions

  1. In a Dutch oven over medium-high heat melt the butter
  2. Add bell pepper and cook for 2 - 3 minutes, stirring frequently
  3. Add onions and cook until onions and pepper are softened
  4. Add ground chuck and cook until completely browned all the way through, stirring often and breaking up into small pieces
  5. Drain off any grease and return to the pot
  6. Add beer, crushed tomatoes, tomato paste, beans, chili powder, cayenne, bay leaf, salt, and hot sauce, stir to combine
  7. Bring to a boil, reduce heat and simmer 45 minutes to 1 hour
  8. Serve with any of the optional toppings and sides

Easy Slow Cooker Buffalo Chicken Sliders Recipe

Ingredients

  • 3 boneless chicken breasts
  • 1 cup chicken stock or water
  • salt and pepper
  • 1 bottle of prepared Buffalo sauce
  • 1/4 head of purple cabbage shredded or thinly chopped
  • 2 - 3 jalapeno peppers sliced
  • 4 ounces blue cheese crumbles
  • Slider rolls

Instructions

  1. Add chicken and stock or water to a slow cooker and cook on low 5 - 6 hours or until the fat part has an internal temperature of 160
  2. Remove chicken from slow cooker, drain most of the liquid but leaving a little in the pot
  3. Shred chick with two forks
  4. Return chicken to slow cooker
  5. Add prepared Buffalo sauce, reduce temperature to warm or keep on low until warmed through
  6. Keep warm
  7. Serve on slider rolls and top with cabbage, jalapenos, and blue cheese crumbles

NOTES

  1. I recommend making a slider bar near the slow cooker to avoid soggy buns.  Just keep warm and set out the toppings for guests to make their own
  2. There was plenty here to make 12 – 15 sliders
  3. Serve with carrot and celery sticks and some ranch and/or blue cheese dressing

Cheesy Pull Apart Garlic Bread Recipe

Football season is right around the corner y’all and I can’t tell you how excited I am!  And what comes with football?  Tailgating, of course!  To celebrate football season and all things tailgating, I’ve teamed up with a group of bloggers from all over the country that are huge football fans.  We are bringing you 64 tailgating recipes that will keep you in tailgating celebrations all season long while you cheer on your favorite teams.

My contribution is a classic must have for any football tailgating party – the cheesy pull apart garlic bread.  This is a fun and delicious appetizer guaranteed to win with any crowd.

Cheesy Pull Apart Garlic Bread Recipe

Cheesy Pull Apart Garlic Bread Recipe

Ingredients

  • 1 large round or oblong loaf of crusty bread
  • 1 stick butter
  • 3 tablespoons minced garlic
  • 4 -5 cups shredded cheese - I used a combination of fontina smoked gouda, Swiss, and white sharp cheddar
  • 2 -3 tablespoons chives green onions, or parsley, chopped, optional

Instructions

  1. Preheat oven to 350
  2. Melt butter with garlic over low heat for a 2 -3 minutes
  3. Without cutting all the way through the bottom, slice bread long-wise and cross-wise making 1/2 inch squares across the top of the bread
  4. Pour melted butter and garlic over bread, making sure that it goes all down in between the cut squares as well as over the top
  5. Stuff shredded cheese down into the sides of all the cut squares - you may have to really jam it in there, but it's totally worth the effort - the more the better!
  6. Transfer to a baking sheet lined with parchment paper and bake for 15 - 20 minutes or until bread is golden and cheese is bubbly
  7. Garnish with chopped chives, green onions, and/or parsley if desired

Note: The instructions say to bake this bread in the oven, which is what I do when I take it to tailgating or any other party, then just warm it up on the grill.  You can also prepare it in advance (except the baking) and finish it on a grill over indirect heat – what you are going for is melted and bubbly cheese.

Note: Feel free to add any other ingredients right before baking, such as cooked bacon or sausage, chopped jalapeno or other peppers, pimento cheese, etc.  Obviously you would want to cook any raw meat before adding it to the bread then bake it.

Smoked Gouda, Fontina, American Grilled Cheese with Bacon and Coco Loco Caramelized Onions

Hi friends!  How is your week going so far?  Are you still digging your way out of the snow?  Are you over snow and cold weather and ready for some comfort food?

I know I am.  And I’ve got the cure for what ails ya.  I’m not sure that there is a better comfort food than a big, melty, bacon-y, buter-y, grilled cheese. This one is a bit over the top with a combination of smoked gouda, fontina, and american cheeses.  We also felt the need to throw in some bacon.

BTW – I have zero idea why in tarnation I have decided that I am a we.  Just roll with it.  And don’t judge me.

Oh.  And remember Crostini?  The Coco Loco Caramelized Onions make the perfect finishing touch to this over the top grilled cheese.

I joke you not.  I think we had these grilled cheese sammies at least 3 times in one week.  And now that the Super Bowl is right around the corner, we’re all thinking about some football appetizers and finger food.  #KeepPounding #PanthersNation

You could totally quarter these into triangles or smaller square pieces and your friends can grab one with one hand to keep the other free to Dab with Cam, Luke, Greg, and the boys with all the touchdowns we hope to make!
