Jalapeno Pale Ale Chili is an adult version of a delicious winter food perfect for sharing with friends while watching some football games.

I know that this isn’t the first time you’ve seen beer in chili, but it’s classic for football games and beer brewing around these parts, so I’m popping in real quick to share some with you today.

And I have a surprise!  Not only am I sharing some Jalapeno Pale Ale Chili for all you football festivities, I’ve teamed up with a bunch of bloggers to bring you a collection of everything you could possibly need for the next round of playoffs and into the final Big Game of the season.

My beloved Carolina Panthers didn’t have as great of a season this year as last year, so we’re out of the running.  I hope your team wins and at least you can enjoy some delicious food while you sit on the edge of your seat for what I hope is a great last day of playoffs and final game of the season!

Jalapeno Pale Ale Chili

Ingredients

  • 1 tablespoon butter
  • 1 green bell pepper diced
  • 1 small onion diced
  • 1 - 1 1/2 pounds ground chuck
  • 1 cup beer
  • 1 32 ounce can crushed tomatoes
  • 1 15 ounce can tomato sauce
  • 1 15 ounce can dark or light red kidney beans
  • 3 tablespoons chili powder
  • 1/4 - 1/2 teaspoon ground cayenne pepper
  • 1 bay leaf
  • 1 teaspoon salt
  • couple of dashes of hot sauce

Optional Toppings and Sides

  • Chopped onions
  • Shredded cheddar cheese
  • Chopped green onions
  • Sliced or diced jalapeno peppers
  • Sour cream
  • Saltine crackers
  • Fritos
  • Tortilla chips or scoops

Instructions

  1. In a Dutch oven over medium-high heat melt the butter
  2. Add bell pepper and cook for 2 - 3 minutes, stirring frequently
  3. Add onions and cook until onions and pepper are softened
  4. Add ground chuck and cook until completely browned all the way through, stirring often and breaking up into small pieces
  5. Drain off any grease and return to the pot
  6. Add beer, crushed tomatoes, tomato paste, beans, chili powder, cayenne, bay leaf, salt, and hot sauce, stir to combine
  7. Bring to a boil, reduce heat and simmer 45 minutes to 1 hour
  8. Serve with any of the optional toppings and sides

Y’all, I have searched the world over and have come to the conclusion that there is absolutely no way to make sausage look sexy.

I’m just keepin’ it real here.  But you totally have to trust me when I tell you that you cannot go wrong with searing off some brats then tossing them in a pot with some beer for a couple of hours.

I’m not totally sure it’s completely legit to call this a recipe, so if you want to agree to simply call it a suggestion, I’m down with that.  And in the spirit of keepin’ it real, this was just supposed to be beer brats with some spicy mustard and sauerkraut for the first Panthers game of the season a couple of weeks ago.  I also made some beer pretzel bites and smoked gouda beer cheese to nosh on or throw at the TV.

The reality is that Lisa came over to watch the game and she decided that the smoked gouda beer cheese belonged on the brats and on the pretzels, so here we are.  We have some ugly, yet delicious beer brats topped not only with spicy mustard and sauerkraut as originally planned, but then made extra over the top ridiculous with beer cheese splattered all over them.

Easy Beer Brats Recipe

Ingredients

  • 1 package of fresh uncooked brats style sausages
  • 2 bottles or cans of good craft beer
  • 1 jar or package of prepared sauerkraut
  • Hot dog buns or hoagie rolls for serving
  • Dijon mustard for serving
  • Beer cheese for serving

Instructions

  1. Heat a large skillet on high until hot
  2. Add brats and sear on all sides - rotate them every 2 minutes or so
  3. Transfer brats to a Dutch oven, add beer, bring to a boil, cover and reduce heat to a low simmer
  4. Cook covered for 2 1/2 - 3 hours
  5. Heat sauerkraut in a sauce pan
  6. Serve with sauerkraut, Dijon and beer cheese

NOTES

  1. I found fresh uncooked brats with the other sausages in the fresh meat department of the grocery store
  2. Do this right and serve it with some homemade Smoked Gouda Beer Cheese
  3. I made these brats several times and used two of Seirra Nevada’s beers.  I did one batch in Otra Vez, which is a gose and I find a bit on the salty side, so it was a great match.  The other I cooked in Nooner, which is a pilsner and both were great.
  4. I recommend that you start with one can/bottle and then add the other if needed.  You want to be sure that the brats stay covered.

I think it’s safe to say that regardless of how warm the weather is wherever you are, we are totally rolling into fall.  There are apples and apple recipes everywhere, I’m seeing pumpkins at the Publix and the Teeter, Halloween costumes at Costco and Halloween candy all over the dang Walgreens.

I get it.  Everyone is excited to bust out the boots and sweaters, but let’s not get our cart in front of our horse.  It’s still September and you know what that means? Besides apples, of course.  Oktoberfest officially kicked off over the weekend and that, my friends, is cause for celebration!

I got the party started by kicking off the weekend with some Smoked Gouda Beer Cheese last week, and today I’ve made you some Homemade Beer Pretzel Bites to drown in it.  Of course, you could always put the pretzels on a string and wear them around your neck at the next beer festival.  That would be ok too, and who am I to judge?  They’re the perfect bite size snack and they’re made out of beer!!  That’s a win in my book!

You know what else these little nuggets would be good for?  Well, all the football games this weekend! Take them to the tailgate or have a few friends over to root on your favorite college or NFL teams and serve them up with some of that beer cheese we talked about or some spicy mustard and your friends will be smitten.

Whether y’all are cheering on your favorite team (or teams!) or feel like throwing on your lederhosen this weekend, you should absolutely be swinging around a beer and noshing on some tasty homemade beer pretzel bites.

P. S. They’re small enough to throw at the TV without hurting anything when the refs make those ridiculous calls or the wrong guy catches the ball.

Homemade Beer Pretzel Bites Recipe is a super easy recipe and magically delicious. Make bite sized treats to serve as a snack or appetizer perfect for a tailgate party

Homemade Beer Pretzel Bites Recipe

Homemade Beer Pretzel Bites Recipe

Ingredients

  • 1 1/2 cups brown ale
  • 2 tablespoon sugar
  • 2 teaspoons salt
  • 1 package dry active yeast
  • 3 tablespoons butter
  • 5 cups flour
  • 1 tablespoon vegetable oil
  • 2/3 cup baking soda
  • 1 egg
  • 1 tablespoon water
  • 1 - 2 tablespoons coarse sea salt or pretzel salt

Instructions

  1. Combine beer, sugar, salt and heat to just warm - not hot or it will kill your yeast - remove from heat
  2. Stir in yeast and let sit 5-7 minutes - until foamy
  3. Add butter and beer mixture to the bowl of a stand mixer fitted with the dough hook
  4. Turn mixer on low and gradually add flour one cup at a time until combined
  5. Add vegetable oil to a bowl and turn to coat
  6. Transfer the dough to the bowl and turn to coat all sides
  7. Cover with plastic wrap and set in a warm place to rise for 1 hour
  8. Separate dough into 8 equal pieces
  9. Working with one piece at a time, roll out into about 18 inch pieces with your hands and cut into 1 inch pieces
  10. Transfer all pieces to a large parchment lined baking sheet
  11. In a large pot, combine 9 cups of water and 2/3 cup baking soda and bring to a boil
  12. Working in batches, drop the pieces of dough into the boiling water for 30 to 45 seconds, remove from water, and return to baking sheet
  13. Preheat oven to 450
  14. Combine egg and 1 tablespoon water in a bowl and beat lightly
  15. Using a pastry brush, coat the top of each piece of dough with the egg wash
  16. Sprinkle salt on top of each piece
  17. Bake 12 - 14 minutes or until golden brown

NOTES:

  1. I made this dough, divided it in half, and froze the other half.  I thawed the frozen half in the refrigerator and they turned out just fine.
  2. Each half batch made about 3 dozen depending how big you make the pieces.

Either way, I thought we’d take a little break from apples and talk about some Smoked Gouda Beer Cheese.  After all, it’s not just apple season.  It’s football season too and the real Oktoberfest in Munich kicks off this weekend.  All these occasions demand a celebration with some beer cheese.

This stuff is so good, y’all!  You can serve it as a warm dip for vegetables or bread the next time you have your peeps over to watch the game.  It also makes a totally awesome sauce.  Now that I think about it, this would make an amazing mac ‘n beer cheese! With bacon!  OMG!  I need to get on that STAT!

Sorry – I got a bit distracted by how dreamy this smoked gouda beer cheese is.  I’m keeping things short today and peacing out.  But before I go – I joke you not.  You need this in your life!

Smoked Gouda Beer Cheese is a delicious creamy appetizer that's perfect appetizer dip for entertaining or watching the big game. Serve it with some homemade beer pretzels, vegetable sticks, bread or pour it over some pasta for a winning mac 'n cheese!

Smoked Gouda Beer Cheese Recipe

Ingredients

  • 2 tablespoons butter
  • 3 tablespoons flour
  • 3/4 cup beer
  • 1/2 cup milk
  • 1/2 tablespoon dried mustard
  • dash of Worchestershire sauce
  • dash of hot sauce - I used Texas Pete
  • 16 ounces smoked gouda shredded

Instructions

  1. Melt butter in a sauce pan over medium low heat
  2. Add flour and whisk constantly for about 2 minutes
  3. Slowly add beer and milk and bring to a simmer
  4. Whisk 3 - 5 minutes until thick
  5. Stir in mustard, Worcestershire, and hot sauce
  6. Whisk in cheese one handful at a time until all is melted and incorporated
  7. Serve immediately and keep warm

NOTES

  1. I made this smoked gouda beer cheese twice.  I used Lonerider Brewing Company Sweet Josie Brown and Brooklyn Brewing Summer Ale and both were amazing!
  2. I don’t recommend using an IPA or other hoppy beer for this recipe
  3. If you’re not a fan of smoked gouda cheese, feel free to substitute one that you like, but you’ll want to balance the type of beer you use

Football season is right around the corner y’all and I can’t tell you how excited I am!  And what comes with football?  Tailgating, of course!  To celebrate football season and all things tailgating, I’ve teamed up with a group of bloggers from all over the country that are huge football fans.  We are bringing you 64 tailgating recipes that will keep you in tailgating celebrations all season long while you cheer on your favorite teams.

My contribution is a classic must have for any football tailgating party – the cheesy pull apart garlic bread.  This is a fun and delicious appetizer guaranteed to win with any crowd.

Cheesy Pull Apart Garlic Bread Recipe

Ingredients

  • 1 large round or oblong loaf of crusty bread
  • 1 stick butter
  • 3 tablespoons minced garlic
  • 4 -5 cups shredded cheese - I used a combination of fontina smoked gouda, Swiss, and white sharp cheddar
  • 2 -3 tablespoons chives green onions, or parsley, chopped, optional

Instructions

  1. Preheat oven to 350
  2. Melt butter with garlic over low heat for a 2 -3 minutes
  3. Without cutting all the way through the bottom, slice bread long-wise and cross-wise making 1/2 inch squares across the top of the bread
  4. Pour melted butter and garlic over bread, making sure that it goes all down in between the cut squares as well as over the top
  5. Stuff shredded cheese down into the sides of all the cut squares - you may have to really jam it in there, but it's totally worth the effort - the more the better!
  6. Transfer to a baking sheet lined with parchment paper and bake for 15 - 20 minutes or until bread is golden and cheese is bubbly
  7. Garnish with chopped chives, green onions, and/or parsley if desired

Note: The instructions say to bake this bread in the oven, which is what I do when I take it to tailgating or any other party, then just warm it up on the grill.  You can also prepare it in advance (except the baking) and finish it on a grill over indirect heat – what you are going for is melted and bubbly cheese.

Note: Feel free to add any other ingredients right before baking, such as cooked bacon or sausage, chopped jalapeno or other peppers, pimento cheese, etc.  Obviously you would want to cook any raw meat before adding it to the bread then bake it.

I know I’m kind of on a crostini kick lately.  Today just seemed like the perfect time to share this Roasted Beet, Roasted Garlic, Goat Cheese, and Pistachio Crostini.  We’re just days away from the Super Bowl and Valentine’s Day is right around the corner, so in my world this works for both!

And we’re just days from Super Bowl 50!  This roasted beet crostini is a lovely and colorful appetizer idea for a romantic Valentine’s Day dinner AND it’s a perfect Super Bowl food for the big day.  I mean, seriously, it’s not a party in our house unless there are roasted beets!  Your veg friends will thank you too!
