Smoked Gouda, Fontina, American Grilled Cheese with Bacon and Coco Loco Caramelized Onions

Hi friends!  How is your week going so far?  Are you still digging your way out of the snow?  Are you over snow and cold weather and ready for some comfort food?

I know I am.  And I’ve got the cure for what ails ya.  I’m not sure that there is a better comfort food than a big, melty, bacon-y, buter-y, grilled cheese. This one is a bit over the top with a combination of smoked gouda, fontina, and american cheeses.  We also felt the need to throw in some bacon.

BTW – I have zero idea why in tarnation I have decided that I am a we.  Just roll with it.  And don’t judge me.

Oh.  And remember Crostini?  The Coco Loco Caramelized Onions make the perfect finishing touch to this over the top grilled cheese.

I joke you not.  I think we had these grilled cheese sammies at least 3 times in one week.  And now that the Super Bowl is right around the corner, we’re all thinking about some football appetizers and finger food.  #KeepPounding #PanthersNation

You could totally quarter these into triangles or smaller square pieces and your friends can grab one with one hand to keep the other free to Dab with Cam, Luke, Greg, and the boys with all the touchdowns we hope to make!

    I’m a little excited to cheer for my new home team at the superbowl… don’t get me wrong, I am STILL a huge fan of my original team – the Jags- but since they didn’t make it, I don’t have to choose sides. Winning! Anyways, love grilled cheese, because really, what’s not to love! And these look over the top delicious! Love the trio of decadent cheeses, bacon and beer caramelized onions! I need one for each hand, so I’ll have to fist bump with my feet. 😉 Cheers, my dear! Xo

    UGGGHHH! Can this damn Super Bowl be over already! I guess ya’ll need to celebrate cos it’s probably the last time you will be there so enjoy 🙂 The Panthers are the best team out there this year and y’all deserve to be there, but I’m not telling you that!
    Grilled cheese and me love each other…a lot. I can eat a good grilled cheese every single day, a few times a day, for the rest of my life and not tire of it. This smoked gouda and fontina with beer caramelized onions and BACON(!!!)is outta control and I could eat 3 of them in one sitting, which is probably what I am going to do 🙂

    Oh… my… gawd!!!! Grilled cheese is my ultimate comfort food and you have stepped up the grilled cheese game with this one! Seriously, I adore every ingredient in this sandwich! Awesome combo of cheeses, bacon, caramelized onions…. I would literally stuff my face until I couldn’t eat any more!

    I haven’t had grilled cheese in far too long! This sounds fantastic – I love that you used fontina (one of my very favorite cheeses!). It melts just so perfectly!

    Whew….that looks amazingly good. We’ve had nothing but rain this past week, so no shoveling for me…but I’m still gonna have one of these grilled cheese sandwiches. Adding bacon is just….oh….so amazing!

    I like that you had this grilled cheese three times in one week! Fantastic. Whenever I find a comfort food I like I eat it again and again until people look at me like I’m nuts!
    Is there anything better than blinged out grilled cheese? This looks amazing. We’re in for another snowstorm here this week. I could definitely curl up with one of these while the wind howls outside.
