Stuffed Mushrooms

I have some confessions to make.  I’ve been totally addicted to General Hospital since high school. And I  used to be a flight attendant.

True story.  I was a fly girl for Eastern Airlines before they went under.  After that I flew for Southwest Airlines for several years.

All that happened in my twenties and before law school.  Those were some crazy times, man.  That’s all I’ve got to say about that…..

The point of this information is that I had this friend Tammi who was also a flight attendant and she made these stuffed mushrooms.

There is absolutely no point to the information about my life-long General Hospital addiction.  I just felt like I needed to be honest with you and get that off my chest.  I’m really glad we had this talk.

Back to the stuffed mushrooms.  Life changing.  Totally.  They’ve been a staple and favorite appetizer in our house for years.

I was introduced to these little gems when I was pregnant with my daughter.

I was watching OJ run from the cops in his white Bronco on TV while experiencing these stuffed mushrooms for the first time.

True story.

Stuffed Mushrooms

Ingredients

  • 10-12 slices of cooked bacon crumbled
  • 1 bunch green onions white and green parts diced
  • 1 8 ounce package of cream cheese softened
  • 40 or so white mushrooms depending on size I used 1 8 ounce package and part of another, 1/2 of the stems reserved and diced
  • 1 - 1.5 sticks of butter

Instructions

  1. Preheat oven to 350
  2. Combine cream cheese, green onions, and bacon in a bowl.
  3. Stuff cream cheese mixture into each mushroom cap, varying amount according to mushroom size
  4. Place all mushrooms into a baking dish
  5. Slice butter into 1/4 inch pieces and drop around mushrooms in baking dish
  6. Bake for 45 - 50 minutes
  7. Serve immediately

    wow you were a flight attendant, how cool is that!! I have always wondered, don’t flight attendants have jet lag? How do they manage with all these crazy hours in different part of the world? You don’t need to answer that, I simply asked! 😀 The mushrooms look amazing, stuffed ones are my favorite!

      I was indeed! Major jet lag is an occupational hazard, for sure! It’s not as hard when you are in your twenties! I’m pleading the 5th on the rest. 🙂 Thanks Manali!

    Girl, I have been watching GH since I was 8 years old with my grandmother. In that time (20 years!) I have only missed a handful of episodes. Woah, did I really just admit that? Anyway, these stuffed mushrooms look phenomenal!

    Rachelle, these look like the best stuffed mushrooms ever! This is always my go-to appetizer at parties, I just love anything with mushrooms. And I think I could make a whole meal out of this! Pinned!

    Man, I wasn’t eating stuffed mushrooms while OJ was running. I think I was just sitting there, watching. How dull.
    These are terrific, seriously. And I can’t believe you’ve had all those jobs! You must be a really fun dinner party guest!

      Hahaha! It’s been an adventure! And I was kind of in a knocked up situation when OJ was running, so I was always eating. 🙂

    Hahaha…OJ running from the cops. Now there’s a throwback if I’ve ever heard of one. Was MC Hammer playing ‘You Can’t Touch This’ in the background, too? And Eastern Airlines? Holy cow…that’s another throwback! I bet you saw all sorts of things back in those days. And law school? I didn’t realize you were a legal eagle. In the spirit of honesty, I’m addicted to Game of Thrones. The tv-show. The books. You name it, I love it. I kinda always wanted to be a knight…or a dragon. So the show resonates with me.

    Enough of the stream of consciousness, though. These stuffed mushrooms look amazing! Pass the plate over my direction please.

      OMG – I don’t remember MC Hammer playing at the time because I was stuffing my face with mushrooms. Glad I could provide some throwback for you though. I LOVE Game of Thrones too! Chris and I are totally hooked. I love the dragons! Have you seen Sons of Anarchy? We binged on that one then watched the last season. Intense!
