Mandarin IPA Cranberry Sauce


  • 1 12 ounce bag fresh cranberries
  • 1 cup mandarin or tangerine beer
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon honey
  • pinch or 2 of salt
  • zest of one mandarin or small orange


  1. Combine all ingredients in a heavy bottom pot, bring to a boil, reduce heat, and cook until thick and syrupy, stirring regularly
  2. Cool and serve
  3. Garnish with orange or mandarin zest
