OMG! Look! I made cupcakes!
Aren’t they ugly? LOL!
We are doing some home renovations and have spent a lot of time at IKEA. Have you been? Don’t go on Saturday. It’s totally crowded. I happened to find one of these. Compulsive shopping. What can I say.
Saturday was the first time I tried to use it.
When my car left my house on a flatbed.
For the second time in one week.
So I made cupcakes.
And stuffed them with peanut butter frosting.
And topped them with chocolate buttercream frosting.
See that really ugly one? Chris ate it.
Do you know how to put a piping bag together? I did not. Which was fine because it came assembled. Until I had to change it for the chocolate. Youtube was involved.
I had no idea how to make cupcakes without the mix that comes in a box. I mean, I know that you need flour, eggs, butter, etc., but no clue for proportions. Don’t they do that for you when they package it up in a box? So I found this recipe that looked interesting and used it.
The car is still broken, but I feel better.
Vanilla Cupcakes with Peanut Butter Filling and Chocolate Buttercream Frosting
I used this vanilla cupcake recipe.
Peanut Butter Filling
Adapted from Brown Eyed Baker
Ingredients:
1 stick of butter, softened but not melted
1 cup creamy peanut butter
2 cups confectioner’s sugar
1 1/2 teaspoon pure vanilla extract
1/2 cup heavy cream
Instructions:
Combine butter, peanut butter, sugar and vanilla in a bowl and beat until combined. Add cream and beat until combined and frosting is fluffy.
Chocolate Buttercream Frosting
Adapted from Brown Eyed Baker
Ingredients:
1 stick of butter, softened but not melted
6 oz milk chocolate chips
1/3 cup heavy cream
3 cups confectioner’s sugar
1 teaspoon of pure vanilla extract
Instructions:
Combine chocolate chips and cream in a microwave safe bowl. Microwave for 30 seconds then stir. Microwave for another 30 seconds and stir until chips are melted into the cream and you have a thick chocolate syrup.
Beat the butter with a mixer and add chocolate and vanilla. Continue beating and add the confectioner’s sugar one cup at a time. Beat until smooth.
