It’s Popsicle Week happy hour!

Boozy Root Beer Float Popsicles

You didn’t think I would end Popsicle Week without giving you a boozy popsicle, did you?  I realize that it may be early in the morning when this post hits the interwebs, but it is Friday and the last day of Popsicle Week.  Billy at Wit & Vinegar has hosted this party and you should seriously check out his website because this post almost made me blow beer out my nose.

Speaking of beer, we used some boozy hard root beer in these popsicles.  You could substitute some regular root beer, but I don’t know whyyyyyy in tarnation you would want to do that.

I know these boozy root beer popsicles aren’t quite as colorful as these or these, but I’m here to tell you that they’re just as delicious and totally festive for the popsicle party.

And they even get all kind of foamy on top (or bottom?) just they way a root beer float (boozy or otherwise) does!

Boozy Root Beer Float Popsicles

Ingredients

  • 2-3 cups your favorite vanilla ice cream softened
  • 1 12 ounce bottle of your favorite hard root beer

Instructions

  1. Scoop ice cream into molds about 1/2 - 3/4 full
  2. Slowly pour root beer in over the ice cream, careful not to overflow
  3. Let root beer settle for the foam to go down and slowly add more
  4. Repeat until full - I had a little bit of root beer leftover, which I promptly drank
  5. Cover and insert sticks
  6. Freeze overnight

These Strawberry Kiwi Coconut Pops are my second contribution to this party!  I’m having so much fun with Popsicle Week, I’m kind of out of control over here.  I had to buy a second popsicle mold. Thank you Amazon Prime for always having my back and making packages magically land on my porch in two days.

I digress.  As usual.  Anyhoo – Popsicle Week is the brain child of Billy from Wit & Vinegar.  This is my first year at the party, but it’s the fourth year of celebrating summer with a week totally full of amazing popsicle recipes.

Now, before I forget again, let’s talk about these popsicles.  These are totally easy to make and require only four ingredients.  Strawberries, kiwi, some coconut milk, and agave.  That’s it. Done and done! After a night in the freezer the’re ready for the party.

You don’t have to share.  I won’t tell anyone.

Strawberry Kiwi Coconut Popsicles

Ingredients

  • 16 ounces fresh strawberries cleaned and hulled
  • 5 kiwi pealed and quartered
  • 2 - 4 tablespoons agave
  • 2 13.5 ounces full fat coconut milk

Instructions

  1. Add strawberries and agave to food processor or blender and puree until smooth
  2. Distribute strawberry puree evenly in popsicle mold
  3. Transfer coconut milk to a pitcher or measuring cup and slowly pour ontop of strawberry puree
  4. Rinse blender and puree kiwi - see notes
  5. Spoon about 1 to 1.5 tablespoons of kiwi puree into the coconut milk
  6. Cover and insert sticks
  7. Freeze overnight
  8. To serve, fill sink with hot water and set popsicle mold into the water for 15 seconds - careful not to go above the top edge
  9. If pops don't easily slide out, dunk in the water again for another 5-10 seconds
  10. Serve immediately or refreeze on a plate


Note: If you use a Vitamix or other high speed blender, take it easy if you want to see the kiwi seeds.

Note:  I had a bit of coconut milk leftover

OMG!  Why in tarnation didn’t you keep me on track here?  I got so worked up about Popsicle Week and the awesome giveaway, I totally forgot to tell you about my popsicles!   I had so much fun making popsicles that I had to order another popsicle mold because my ideas were happening faster than they could freeze and be photographed!  This 3 ingredient blueberry coconut milk combo is so super easy it’s not really fair to call it a recipe, but summer is about easy and who doesn’t love a simple and refreshing treat to beat the summer heat?!?!

Blueberry Coconut Milk Popsicles

Ingredients

  • 1 pint blueberries
  • 1 13.5 ounce can full fat coconut milk divided
  • 2 - 4 tablespoons agave depending on taste and sweetness of blueberries

Instructions

  1. Add blueberries, agave, and 1 cup of the coconut milk to a food processor or blender and puree until smooth
  2. Pour into popsicle molds, leaving an inch or so of space at the top
  3. Transfer remaining coconut milk to a measuring cup and slowly pour on top of the blueberry mixture
  4. Take a butter knife and slide into each mold and swirl a little bit
  5. Cover with lid, insert sticks into each, leaving about an inch or so out
  6. Freeze overnight
  7. To remove the pops, fill sink with hot water and set into water for 15 seconds, careful not to go over the top
  8. If the popsicles don't easily slide out, dunk the mold again for another 10 - 15 seconds
  9. Serve immediately or refreeze on a plate

Hi, y’all!  I’ve missed you!  My personal and professional lives got totally busy and complicated and I had to take some much needed time to make some decisions.  While I love this here website and all you fine and wonderful friends, I’ve been thinking for some time about cutting back on my twice weekly posting. Seriously, I don’t know how some of you with full time jobs manage to keep up with posting multiple times a week. My hat is off to all of y’all.

So, I’m coming at you on a Wednesday with some boozy popsicles to announce that I’m going to be posting only one time a week at least for the duration of the summer.  I may also boycott all social media, but that’s a radical decision that has yet to be made.

While I’ve said that I’ve been contemplating this decision for a while, it was this post from my friend, Annie that was really the turning point and helped me realize that I need to stop and smell the roses or take a moment to enjoy a sangria on the patio with my husband.  Or pet a puppy.  Or enjoy a boozy popsicle just because I happen to have an abundance of tequila and strawberries.

So let’s get this summer season kicked off right now with some Strawberry Key Lime Margarita Ice Pops! We combined some strawberries, key limes, Greek yogurt, and of course, tequila and poured it all into an ice pop mold for a tangy, boozy, tasty, treat to beat the summer heat.  Not that we’ve had much of that around the Carolinas lately, but it’s on the way.  Trust me.

Strawberry Key Lime Margarita Greek Yogurt Ice Pops

Strawberry Key Lime Margarita Greek Yogurt Ice Pops

Ingredients

  • 1/2 pint fresh strawberries hulled and
  • 2 key limes juice and zest, plus one sliced thin to add to ice pop mold, optional
  • 1/4 cup tequila
  • 2 cups plain Greek yogurt
  • 1/4 - 1/3 cup sugar according to taste and how sweet your strawberries are

Instructions

  1. Combine all ingredients in a food processor and blend until combined
  2. Pour into ice pop molds according to manufacturer's instructions (mine made 10)
  3. I added a slice of key lime to each ice pop mold, but this is totally optional
  4. Freeze overnight
  5. Transfer frozen ice pops in mold to a bowl of 1 inch hot water for a few seconds to loosen up the pops for easy removal


Update: I updated the recipe to include sugar which was accidentally omitted.
