I thought I’d just pop in real quick with one more super easy apple recipe.

And I don’t think there is anything better to go with apples as cinnamon and caramel – in case you hadn’t noticed.  And who doesn’t love a sweet and tasty grab and go portable breakfast layered with tasty fruit and oats?  You could almost call it dessert, but then it wouldn’t be so easy to tell yourself that it’s good for you.

I normally use full fat coconut milk when I make overnight oats, but I didn’t think the flavor would work as well with cinnamon caramel apples as it does with blueberries or peaches, so I just used regular old grade A whole milk in here.

I also added some chia seeds because Chris loves them and they help make everything all thick and delicious with some additional fun texture.

Caramel Apple Chia Overnight Oats Recipe

Ingredients

  • 2 - 3 apples cored, peeled, and roughly chopped into bit size pieces
  • 1/4 cup brown sugar
  • 1 tablespoon butter
  • 1/8 teaspoon cinnamon
  • pinch of nutmeg
  • 1 1/2 cups old fashioned oats
  • 1 1/2 cups whole milk
  • 2 tablespoons chia seeds

Instructions

  1. Combine apples, brown sugar, butter, cinnamon, and nutmeg in a sauce pan and cook on medium low until apples are softened, but not mushy (10 minutes or so) - or desired texture is reached
  2. Set aside
  3. In a medium size bowl, combine oats, milk, and chia seeds
  4. Spoon half of the oat mixture in a layer evenly in the bottom of 4 - 5 Mason jars, then a layer of half the apple mixture, and repeat with another layer of oat mixture and top each with remaining apples
  5. Top with lids and refrigerate overnight

NOTES:

  1. Feel free to switch out the fruit and use something different.  I think pears would be amazing in here.
  2. These photographs were taken before the overnight oats finished their overnight part of the title because I learned a long time ago that things don’t always last long enough to get a picture – the point is that after they sit overnight they will be thicker.
  3. You will likely get 4-5 individual servings in jars, depending what size jars you use.
  4. I used a combination of granny smith and gala because I had a ton of both, but I think any variety of apple would work in here just fine.  Use what you like.

I’m usually of the opinion that Monday’s blow, but this particular Monday is probably the saddest day of the year for the kids of the Charlotte school system.  While, I’m sure I’m hearing cries of joy from all the parents, I’m fairly certain the kids are primarily feeling  gloom and doom for the end of carefree summer days and all things fun to the return to school.  Kids, you have my sympathy.

I’m a bit late to the back to school recipe party due to my involuntary 28 day abstinence from all things internet, blog, social media, and the outside world thanks to Microsoft totally blowing up my computer with its stupid forced Windows 10 update and the ongoing aftermath plethora of technical problems.  I think I should be compensated with unlimited new computers and software for life.  Who’s with me?

Even though Microsoft and back to school can both totally suck it, we’re still lucky enough to have an abundance of sunshine and summer produce.  I’m not ready to give up summer yet and even though the kiddos may be stuck in a classroom until Thanksgiving break, they can start out their days with some Peaches and Cream Chia Overnight Oats.  This is such an easy make ahead grab and go breakfast, it’s a win for mom or dad and/or the kids can practically make it themselves.

Don’t like peaches?  No judgments.  Use strawberries, or blueberries, or cherries, or some kind of berry combo.  The chia seeds help with an interesting texture and pudding consistency, but if that’s not your jam, just leave them out and it will still be delicious, but not quite as thick.  You can also substitute honey or maple syrup for the agave.  You can double it up so there is enough to pack for the kids to take to school and for you to pack for work.  Moms and dads should start out the day right too.

Peaches and Cream Chia Overnight Oats Recipe

Ingredients

  • 3 -4 medium peaches pitted, diced, and skin removed
  • 1 13.5 can full fat coconut milk
  • 1 cup old fashioned oats
  • 1/3 cup chia seeds
  • 2 tablespoons agave
  • couple pinches cinnamon for optional garnish

Instructions

  1. Combine coconut milk, oats, chia seeds, and agave in a large bowl
  2. Distribute coconut milk mixture evenly between 4 or 5 small Mason jars
  3. Distribute peaches evenly over the top of each jar with coconut mixture and sprinkle with cinnamon if using
  4. Cover tightly with jar lids and refrigerate

I don’t know about y’all, but I’m totally ready for the weekend.  I’m having another brutal week and can’t wait for a couple of days with no alarm clocks, ringing phones, or urgent emails.  Perhaps I can put my fire extinguisher away as well.  One can always hope!

Since I’m kind of fried and the weekend is thankfully approaching, we’re keeping things short today so we can get through this thing called life and arrive at the two day break we all know and love.

I think most of us need the weekend like a lighthouse beacon guiding us home in the middle of a dark and scary storm.  I know I do!

I have to admit that I don’t typically eat breakfast on weekdays.  If I do it doesn’t happen until about 10:00 am.  I’m not sure why, but I just can’t usually handle the thought of anything more than coffee until I’ve been up for several hours.  But to keep things real on this here website, I’ll be honest and admit that I’d rather spend my time sleeping as long as possible, then dedicate my before work awake hours making sure my hair is styled and my eye shadow and lipstick are in place before leaving the house (so I don’t scare anyone) rather than waste spend time eating breakfast.

It is what it is.  Don’t judge me.

Anyhoo – blueberry jam overnight oats are a huge hit in our house (mostly for Chris – see above) because we can make them, store them in mason jars in the fridge, and either pack them in lunch boxes at night or grab and go in the am.

They’re also a really simple and delicious comfort food to help you sail through the rough waters.  I wish us all smooth sailing from here on out!  Happy almost weekend, y’all!

Notes:

  • We use regular coconut milk and found that the light version had less flavor
  • You can substitute honey for agave
  • If you substitute almond, rice, or other milk you may need less milk or more oats to get the texture you want since coconut milk tends to be pretty thick and we like it that way rather than runny
  • Sometimes I add 1/3 cup of chia seeds to the mix

Saturday Night Special – GiGi’s Granola

I know that granola is totally not sexy.  I also know that it’s Saturday night, which makes granola even less sexy, so I’m going to keep this short and get to the point.

GiGi recently posted about food (prepackaged) you think is good for you, but when you dive deep and check out the ingredients they’re packed with sugar and loaded with calories.

Now, I’m not hating on the cheesecake or anything, but sometimes you have to lighten things up or you could blow a button.  This lead to a discussion of sorts between GiGi and me about whether I have a recipe for homemade granola.

Ummm…No?

So, not necessarily a challenge, but maybe more in the spirit of a fun request, I have gone to the kitchen to throw together come up with a granola recipe that is healthy, delicious, and low in added sugar.  This granola is not sweet and has no added sugar, but if you need that in your life add a tablespoon or two of brown sugar, stevia, or more honey.

Granola

Ingredients

  • 2 cups rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup pumpkin seeds
  • 1 cup cashews
  • 1/4 cup almonds
  • 1/2 teaspoon salt
  • 3 tablespoons honey
  • 1/4 cup maple syrup
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat oven to 225
  2. Combine oats, cranberries, cashews, almonds, pumpkin seeds, cinnamon, and salt in a large bowl
  3. Combine honey and maple syrup in a small bowl
  4. Pour honey/maple syrup mixture over oat and nut mixture and stir until well coated
  5. Line a large baking sheet with parchment paper, spread the granola mix in an even layer about 1/2 inch thick, and press it with the back of a spoon or spatula
  6. Bake for about 1 hour then let cool slightly
