White Hot Chocolate with Bourbon Barrel Stout Marshmallows

December 16, 2016 by rachelle 15 Comments

White Hot Chocolate with Bourbon Barrel Stout Marshmallows is an adult version of a classic winter warmer made with white chocolate and beer marshmallows.

Who wants to faceplant into some White Hot Chocolate and Bourbon Barrel Stout Marshmallows?

White Hot Chocolate with Bourbon Barrel Stout Marshmallows is an adult version of a classic winter warmer made with white chocolate and beer marshmallows.

As a former Assistant Public Defender, I’m always rooting for the underdog.  The forgotten and left behind.  I rooted for the Sweet Potato and the Sweet Potato Ale and now I advocate for the white chocolate in which to drown your bourbon barrel stout marshmallows.

The winter and holiday season has everyone making some hot chocolate or mocha coffee to warm up with while sitting by the fire in your cozy fuzzy slippers.  I’m here to tell you to put that down right now and turn your attention to some White Hot Chocolate.

Starbucks has nothing on this.

Ingredients

For the Marshmallows

  • 1 cup cold beer divided
  • 3 packages unflavored gelatin
  • 1 1/2 cups sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 3/4 cup powdered sugar divided
  • 1 teaspoon cornstarch

For the White Hot Chocolate

  • 2 cups whole milk
  • 1 cup white chocolate chips
  • 1 tablespoon vanilla extract
  • whipped cream optional

Instructions

For the Marshmallows

  1. Combine 1/2 cup beer and gelatin in the bowl of a stand mixer and set aside
  2. Combine 1 1/2 cups sugar, 1 cup corn syrup, salt, and 1/2 cup beer in a small sauce pan
  3. Cook over medium heat until sugar dissolves
  4. Increase heat until liquid boils, either heat until temp reaches 240 or boil for two minutes, remove from heat
  5. Lock mixer bowl with gelatin and water into the stand mixer, attach whisk, and turn on low
  6. Slowly stream syrup mixture into gelatin with mixer continuing on low
  7. Increase mixer speed to high and continue whipping until fluffy, about 15 minutes
  8. Add vanilla, whisk another 30 seconds or so
  9. Dust a casserole dish with 1/4 cup powdered sugar to coat, transfer marshmallow mix to dish, leave uncovered overnight - either in refrigerator or on counter
  10. Combine remaining 1/2 cup of powdered sugar with the cornstarch and sprinkle it all over a large cutting board
  11. Turn marshmallow square onto the prepared cutting board and cut into desired shapes, turning each piece to coat in the powdered sugar once cut

For the White Hot Chocolate

  1. Combine milk, vanilla, and white chocolate chips in a small sauce pan and heat on low until chocolate is melted, stir to combine and make smooth
  2. Pour hot chocolate into cups, top with marshmallow and whipped cream, if using

NOTES:

  1. As always, the recipes using beer are intended for adults only.  Please do not give alcohol to minors.  This recipe in particular does not have all the alcohol cooked out of it, which is a nice showcase of the flavor of this beer, but not appropriate for everyone.
  2. The marshmallows are sticky, but once you coat all sides with powdered sugar they are easier to handle.
  3. This recipe makes two 1 cup servings of White Hot Chocolate and the amount of marshmallows will vary depending how they are cut

S’mores Martini

July 20, 2016 by rachelle 11 Comments

Since we’ve already trashed this week by starting out with beer and donuts on Monday, let’s just keep going with some S’mores Martinis and just call it booze week.  You dig?

S'mores Martini

I don’t know about y’all, and I know I always say this, but I sure am ready for the weekend!  It’s been tough going over here with all this trying to eat healthy during the week ’cause I’ve been complaining that my pants don’t fit for approximately 9.467 months and haven’t done anything about it until now.

S'mores Martini

All I’ve been eating are salads and fish during the week and dreaming of the beautiful weekend of stuffing my face into donuts, boozy ice cream, and chocolate-y, sticky, gooey, marshmallow-y S’mores Martinis.

S'mores Martini

I gotta be honest here too.  I don’t even really love marshmallows.  It’s a texture thing.  But I’m serious as a train wreck when I tell you that when that stuff gets all melted and toasty I don’t know what in tarnation comes over me, but that stuff is DELICIOUS!  Combine it with some chocolate booze and I’m a goner.  No self control.  Zero.

S'mores Martini

If you’re not busting out of your pants and don’t have to wait until the weekend to have yourself some indulgent S’mores Martinis, I highly recommend you get your self to the booze store STAT then swing by your local Publix or Teeter for some fluff, marshmallows, and graham crackers or crumbs – I usually get those ’cause I’m totally lazy and usually in a hurry to get to the good stuff and not necessarily in the mood for graham smashing.  Although it depends on the kind of day I’ve had. Or how fast I need that martini in hand and down the hatch.  Sometimes a good graham smashing is good for the mental health.

S'mores Martini

Sigh….  Is it Friday yet?

  • 1.5 ounces heavy cream

Instructions

  1. Transfer marshmallow cream to a bowl and microwave 15-20 seconds, stir
  2. Coat edge of martini glass with melted marshmallow cream
  3. Coat the marshmallow cream edge of the glass with graham crumbs, set aside
  4. Add marshmallow to a parchment paper lined baking sheet
  5. Toast marshmallow under broiler 1-2 minutes, rotate and toast another 30 seconds to 1 minute, rotate again and toast another 30 seconds to 1 minute, remove from oven and let cool while mixing the martini

S’mores in Mason Jars

July 14, 2016 by rachelle 9 Comments

I realize that it’s still National Ice Cream Month, but it just isn’t summer in the South until you put dessert in a jar.

S'mores in Mason Jars

And yes.  I meant to capitalize South.  It’s a proper noun down here and we’re getting busy with our s’mores jars.

S'mores in Mason Jars

I know I’ve been smacking y’all in the face with some popsicles and ice cream.  I figured we all could use a break.  So I threw together some dark chocolate pudding, whipped up some marshmallow topping, broke up some graham crackers, and tossed it all together in a jar.

S'mores in Mason Jars

Down here we call that dessert.

S'mores in Mason Jars

And it’s a totally picnic worthy dessert because you put all that s’mores, dark chocolate pudding, graham crackers, and whipped marshmallow frosting in a jar.  Then you top it with chocolate bar and a perfectly toasted marshmallow.  Or a burnt one.  That’s sometimes the way I like to roll.

S'mores in Mason Jars

The cool thing is that then you can just put a lid on it!  You store it in the fridge until it’s time to go! It’s a perfect make ahead and take dessert to whatever family party or horrible family reunion you’re forced to attend.

S'mores in Mason Jars

But you’re the hero.

Because you brought s’mores in a jar.

Have a great weekend, y’all!

Love, Rach

S’mores in Mason Jars

Ingredients

For the Dark Chocolate Pudding

  • 4 egg yolks
  • 3/4 cup sugar
  • 2 cups whole milk
  • 3 tablespoons cornstarch
  • 1/3 cup dark cocoa powder
  • 2 tablespoons vanilla extract
  • 2 tablespoons butter

For the Marshmallow Topping

  • 2 sticks butter softened
  • 1 tablespoon vanilla bean paste
  • 1 18 ounce container of marshmallow cream
  • 24 graham cracker sheets
  • 4 Mason Jars
  • 4 regular size marshmallows
  • 1 1.55 ounce chocolate bar broken into 4 pieces

Instructions

For the Dark Chocolate Pudding

  1. Whisk together egg yolks and sugar in a small bowl
  2. In a medium pot, heat milk, cornstarch, and cocoa powder until warm and steamy - do not boil - remove from heat
  3. Slowly whisk 1/2 cup of the hot milk into the egg mixture and repeat until milk is reduced by half
  4. Add the egg/sugar/milk mixture back into the pot with the remaining milk and bring to a light boil, stirring constantly.
  5. Just when the bubbles begin, remove from heat, stir another 1-2 minutes
  6. Stir in vanilla and butter until butter is melted and let cool for a few minutes
  7. Place a fine mesh strainer over a bowl and pass the pudding through the strainer into a bowl - this will catch any egg pieces that may have scrambled
  8. Cover with plastic wrap so that the plastic touches the surface of the pudding to prevent a skin from forming
  9. Chill in refrigerator overnight

For the Marshmallow Topping

  1. Beat butter on medium until smooth
  2. Beat in marshmallow cream and vanilla bean paste

To assemble

  1. Break up 12 graham crackers and evenly distribute into 4 mason jars
  2. Evenly divide the chocolate pudding between the 4 mason jars
  3. Crumble and divide the remaining 12 graham crackers evenly on top of the pudding
  4. Evenly top with marshmallow topping
  5. Transfer marshmallows to a baking sheet lined with parchment paper and toast under broiler for 1-2 minutes, rotate and toast another 30 seconds to a minute, turn again and toast for another 30 seconds to 1 minute
  6. Top s'mores with toasted marshmallow and chocolate pieces
  7. Serve immediately or cover and refrigerate for later

S’mores No-Churn Ice Cream

July 4, 2016 by rachelle 16 Comments

I thought we’d take a break from popsicles.

S'mores No-Churn Ice Cream

Just for a minute!  We need to talk about ice cream today.  Do you know that July is National Ice Cream Month?  It’s totally legit. Trust me.  I know these things and I never joke about ice cream.

S'mores No-Churn Ice Cream

We discussed this last year, but if you’re new to these parts, welcome!  Or if you need a refresher, President Reagan signed a Presidential Proclamation in 1984 making July National Ice Cream Month and the third Sunday National Ice Cream Day.  You can read all about it here.

S'mores No-Churn Ice Cream

Can someone please sign into public law a National Popsicle Month?  I’d be forever grateful.

S'mores No-Churn Ice Cream

Now, I realize that some of you may not yet have been born back in the days of 1984, but wasn’t it nice of those of us coming before you to pave the way with our very stylish fashion trends, cassette tapes, perms, and Jane Fonda aerobics VHS tapes complete with leotards and leg warmers.

You’re welcome.  Don’t forget the animal print and neon hair scrunchie.

S'mores No-Churn Ice Cream

If you were part of this planet in 1984, I don’t know what in tarnation you were doing from 3:00 – 4:00, but I was keeping up with Luke and Laura.  Not much different than what I do today.  Only enjoying my guilty pleasure of General Hospital these days is much easier with the whole DVR thing.

Thank you, Time Warner Cable for that $248 a month cable bill.  You make life worth living.

S'mores No-Churn Ice Cream

I recommend and 100% support an afternoon of staying inside with the A/C to veg out with some GH binge TV and a big bowl of S’mores No-Churn Ice Cream to beat the heat these hot summer days.

And for Jennifer, who requires photos of steps – here you go:

Chocolate and Candy Cane Homemade Marshmallows

December 3, 2015 by rachelle 32 Comments

DSC_0142

Well, hello there December and all things holidays!  It’s the most wonderful time of the year!!!!

DSC_0056

Is it just me or is December probably the most fun and exciting month of the whole year?

DSC_0003

The change from November to December is so dramatic.  It’s as if fall has ended on Thanksgiving and winter starts December 1st.  Even though this is the gateway to winter, we can embrace and celebrate December because there  are cookies and candy and hot chocolate and marshmallows and awesome lights and decorations and presents …..

DSC_0006

You get the picture.

DSC_0010

FULL DISCLOSURE: I do not eat marshmallows.  I have a weird aversion to all things sticky.  It’s a texture issue.  I do love how they look, my family and other peeps dig them, and they’re fun to make, so here we are.

DSC_0014

And yes.  I have a pink Kitchenaid.  Don’t judge me.  Also, I’m bringing sexy back with my reflection in the bowl wearing pink pajama pants and a green t-shirt while taking this photo.

DSC_0018

Chris is one lucky guy.

DSC_0080

Seriously, have you ever made marshmallows?  It’s super easy and totally fun!  I made some last year for Christmas gifts and they were loved by all.

DSC_0078

You can keep it simple and just cut them into squares or use a cookie cutter and make them into fun shapes.

DSC_0087

DSC_0112

DSC_0115

DSC_0116

Then, of course, you can (and probably should!) coat them in some chocolate.  I used Wilton because I happened to see CANDY CANE MELTS at the grocery.  Whaaaat???!?!?!

DSC_0141

This is totally not a sponsored post, I just got excited about the candy cane option I haven’t seen anywhere else.

DSC_0138

You can (and probably should!) do some chocolate ones too.  And then toss on some festive decorations! Because why wouldn’t you?

DSC_0112PM1

Then maybe drop one in some hot chocolate because that’s always a great idea!

Happy Holiday Season!
