I’m feeling frisky this week, y’all!  It’s my birthday month and we’re giving stuff away! We (and again, I mean me and IDK why????) have stepped things up a bit and in the spirit of my birthday and the upcoming holiday, I took the traditional Shepherd’s Pie and, well….. duh!  I added beer! Because why not?  If you want a family friendly version either substitute the beer for beef stock or go with this recipe where I made Shepherd’s Pie and lamented about how the only thing I wished I did different was to add beer.  So I put it in a glass.  What can you do?  I went with the People’s Porter from North Carolina’s own Foothills Brewing because if it’s a beer you want to drink in a glass, it’s a beer you want to cook with.  And I do love their beer any way I can get it!

Peanut Butter, White Chocolate, and Cranberry Cookies

I’m glad we go that out of the way.  I know y’all are not used to seeing a sponsored post disclosure on this here website.  All these fine folks sent me their wonderful products to bake up a bunch of holiday cookies and the federal government requires that I tell you about that.

Moving on!  We totally kicked off the Sweetest Season Cookie Exchange on Saturday and here is my first contribution!

We’re starting out with some peanut butter, white chocolate, cranberry cookies for this cookie exchange! I know this is almost the exact cookie as the white chocolate peanut butter hazelnut, white chocolate chip cookie from October, but cranberries are just so wintery-y.  I swapped out the hazelnuts for cranberries to make things more festive!

I have more coming.  The rest have more of a retro feel to them.  I pulled a bunch of recipe cards from my gram’s recipe box and I’m going to be sharing some of my family’s recipes that have been part of our holiday celebration history.

Peanut Butter, White Chocolate, and Cranberry Cookies

Ingredients

  • 1 1/2 cups peanut butter
  • 1 cup brown sugar firmly packed
  • 1 stick unsalted butter at room temperature
  • 1 large egg at room temperature
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 cup white chocolate chips
  • 1/2 cup dried cranberries

Instructions

  1. Preheat oven to 350
  2. Combine flour and baking powder with a whisk or sift together
  3. Beat together peanut butter, butter, and brown sugar
  4. Add egg, then gradually beat in flour - I usually do this in thirds
  5. Stir in white chocolate chips and dried cranberries
  6. Wrap dough in plastic wrap and refrigerate for 1 hour
  7. Using a scoop (I used one that is about 1 tablespoon size), scoop out dough and roll into balls with your hands
  8. Flatten to about 1/2 inch with a fork
  9. Bake 10 - 12 minutes, cool a couple of minutes on the pan then transfer to a rack to cool completely

Happy Wednesday, y’all!  What a better way to start your hump day than with a boozy dessert and a giveaway?!?!

Let’s put beer in everything!  We’ve got cherries reduced in R. J. Rockers Son of a Peach and some Samuel Smith’s Organic Chocolate Stout whipped into the mascarpone.  I confess – Sara Lee helped out with the chocolate pound cake.

Peach Ale Cherries on Chocolate Pound Cake with Chocolate Stout Whipped Mascapone

Ingredients

  • 4 pounds fresh cherries pitted and stems removed
  • 1 12 ounce bottle peach ale I used R.J. Rockers Son of a Peach
  • 2 tablespoons corn starch
  • 1 8.8 ounce container mascarpone cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon honey
  • 2 tablespoons confectioner sugar
  • 6 tablespoons chocolate stout I used Samuel Smith Organic Chocolate Stout
  • Prepared chocolate pound cake slices I used Sara Lee

Instructions

  1. Combine peach ale, cherries, and corn starch in a Dutch oven over high heat, bring to a boil, reduce to a heavy simmer
  2. Cook until thick and syrupy - I let them go for about 1 hour
  3. Set aside to cool
  4. In a stand mixer fitted with the whisk attachment, combine mascarpone, honey, heavy cream, and sugar.
  5. Beat on medium high until combined and smooth - 1-2 minutes
  6. Add chocolate stout and whip until combined, scraping down sides when necessary
  7. Arrange chocolate pound cake on a plate, top with cheese mixture, then cherries

Recipe note:  You do not need 4 pounds of cherries (although they cook down significantly).  I like to cook a big pot of fruit compote and freeze it to use in the winter.  Obviously there was a lot of cherry mixture left over, but the rest was enough for 4 servings.
