Hi y’all!  How was your weekend?  Did you have a big fun cookout?  Lay low with a cold beer by a pool or lake or ocean?  We spent 5 fantastic days in Hilton Head at the Weston Hilton Head Resort and Spa and I totally wish I was still there – although I did miss my fur babies even though they were so in good hands and no parties were thrown that we can tell.

I figured we’d ease our way out of summer and into fall.  I know that Labor Day is kind of that unofficial transition with stupid rules about wearing white (I have zero idea who in tarnation came up with this ridiculousness because it’s still hot as all get out down here) and pools and amusement parks closing.  Those are some sad and heartbreaking days.

I had to cheer some things up around here with some pastry cream in a tart topped with beer infused cherry compote and whipped cream, so I made you some Pineapple Ale Mini Cherry Tarts.  You’re welcome.

I gotta tell ya, it’s been a couple of years since we’ve been able to take a beach vacation.  With four dogs that belong on Misfit Island, it’s hard to get away.  This summer we were able to secure a fantastic pet sitter and made two trips to the beach.  There is not much more relaxing to me as laying on the beach, reading chick lit or legal mystery, and listening to the waves crash while drinking a cold beer or banana daiquiri.

Pineapple Ale Cherry Mini Tarts Recipe

Pineapple Ale Cherry Mini Tarts Recipe

Ingredients

  • 2 prepared store bought pie crust

For the Pastry Cream

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 1/4 cup sugar
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 9 large egg yolks
  • 1 tablespoon vanilla bean paste

For the Cherries

  • 1 pound cherries cleaned, pitted stems removed
  • 1 cup pineapple ale beer I used Ballast Point Pineapple Sculpin - peach could be substituted
  • 1 tablespoon corn starch
  • For the Whipped Cream
  • 2 cups heavy whipping cream
  • 2 tablespoons sugar
  • 1-2 tablespoons vanilla bean paste

Instructions

For the Crust

  1. Preheat oven to 400
  2. Fit crust into mini tart pans, press to form, press edge of dough over top of each pan to cut dough from pan, and prick the bottom of the dough several times with a fork - do this for each of the tart pans
  3. Bake 15 - 20 minutes or until golden brown - you want to bake it all the way because this is the only time it will be in the oven
  4. Cool on a wire rack

For the Pastry Cream

  1. Whisk together sugar, flour, and sal in a large bowl, add eggs and whisk everything together - mixture will be thick
  2. Add milk and cream to a sauce pan and heat over medium heat until steamy, but do not boil
  3. Add 1/2 cup of the hot milk to the egg mixture and whisk to prevent the eggs from scrambling
  4. Gradually add milk 1/2 cup at a time to the egg mixture while constantly whisking until almost all the milk is added to the eggs
  5. Pour all the egg/milk mixture back into the pot
  6. Cook over medium heat, whisking constantly, until it starts to bubble, continue whisking another 1 -2 minutes until thick
  7. Remove from heat
  8. Set a fine mesh sieve over a bowl and pour the pastry cream into the sieve and strain - this will catch any of the eggs that may have scrambled
  9. Cover pastry cream with plastic wrap making sure to press the plastic to the surface of the pastry cream to prevent a skin from forming
  10. Chill completely in the refrigerator

For the Cherries

  1. Add cherries, beer, and corn starch to a sauce pan and stir to combine
  2. Bring to a boil, reduce heat and cook until thick, stirring often - careful not to let it boil over - this should take 15 minutes or so
  3. Remove from heat and cool

For the Whipped Cream

  1. Chill bowl and whisk attachment for stand mixer in freezer for 20 - 30 minutes
  2. Fit bowl and whisk to the mixer
  3. Add heavy cream, sugar, and vanilla bean paste to the bowl
  4. Turn mixer on low to avoid splashing and increase speed to medium high
  5. Beat until light peaks form - this should take 5 - 6 minutes or so - keep an eye on it so it doesn't turn to butter

For the Assembly

  1. Evenly distribute pastry cream into the prepared tart shells/pans
  2. Evenly distribute cherries to the top of the pastry cream
  3. Top each with whipped cream

Note:  All of these steps can be prepared ahead of time and assembled just before serving

Cherry Almond Sugar Plum Galette

I had some cherries and sugar plums looking like they were about to go to slime in my fridge, so I needed to take some action.  And full disclosure – Chris was all wtf chick?  Can’t the friggn’ fridge fairy come along and organize this thing?  Jimminy!

And we are still trying to get this place in order with all the reno we’ve had going on.  Tonight we spent the majority of our evening moving furniture and setting up our office.  It was totally no fun, but WOOT! I now have a home, computer, desk, and a ginormous TV to watch GH whilst chatting with you!  I’m so happy!

So I’m keeping thins short and to the point because I’ve been busy.  And I have to see what Luke and Laura are up to.

Cherry Almond Sugar Plum Almond Galette

Ingredients

  • 1 pint of fresh cherries pitted and stems removed - I used Ranier
  • 3-4 sugar plums pitted and sliced about 1/4 inch thick
  • 1/2 cup sugar
  • 1 tablespoon corn starch
  • 1 tablespoon honey
  • juice and zest of 1 lemon
  • 1/4 cup sliced almonds
  • 1 egg
  • 1 tablespoon water
  • 1 prepared pie crust

Instructions

  1. Preheat oven 400
  2. Transfer cherries and plums to a bowl, add sugar, corn starch, honey, lemon zest, lemon juice, and honey, toss to coat, set aside for a few minutes
  3. Line a baking sheet with parchment paper and add pie crust dough
  4. Transfer cherry plum mixture to center of pie crust dough, leaving 1.5 to 2 inches around the edge
  5. Toss most of the almonds over the cherry mixture and reserve a few for topping and edge
  6. Fold edge to the inside and over the outer edge of the cherry plum mixture, folding in every couple of inches
  7. Toss remaining almonds over top and around curst
  8. Bake for 45=55 minutes, until crust is golden brown

Note: When I baked mine I also had beets roasting so with only a galette in the oven it may take less time, depending on your oven.  Just be sure to check it periodically to make sure it doesn’t burn.

Disclosure:  Use the parchment paper – I didn’t have my crust tight enough and it leaked out to make a mess

Chocolate Stout Cherry Tart with Honey and Vanilla Goat Cheese

Obviously I have a thing for cherries lately.

And beer.  But that’s not really a new thing, is it?  I just haven’t been able to help myself.  I keep seeing these big, beautiful bags of cherries everywhere I go!  It’s a compulsion or some sort of affliction.  Or is it an addiction?  I just start grabbing bags of cherries and throw them in my cart like some kind of crazed mad woman.

Chris looks at me with the concern of a man standing next to his dangerous wife and is all “what are you going to do with so many cherries?” He also looks like he is contemplating diving under the produce shelves.

And pah-leeze do NOT get me started on my booze in food addictions lately.  Seriously, I really really sincerely do have these uncontrollable compulsions to do weird stuff in my kitchen.  I grab some food then go down the beer aisle.  What?  Like that’s unusual?  It’s actually a bit more of a regular affair lately because we haven’t had time to brew.  Sigh…

Don’t get me wrong.  I don’t mean to be hatin’ on store bought beer – so long as it’s legit craft beer made with love.  I just love brewing and there is something so exciting and satisfying about tossing a good home brew into whatever dish you happen to be making.  It just makes it that much more special.

So this tart came to me in a vision while strolling down the beer aisle with a crazy lady amount of cherries in my cart and a momentary distraction when I had to slap Chris’s hand because he was EATING THE CHERRIES STRAIGHT FROM THE CART.  Sorry – I got a tad worked up there.

Anyhoo, I thought about chocolate and cherries, chocolate covered cherries, chocolate stout…it kind of went like that.  I also remembered that I also had a crazy lady amount of puff pastry dough in my freezer.  What?  You don’t? Hey man, don’t judge.  You never know when you might need to make a tart.

So this is kind of a knock-off of my Roasted Beet and Pear Tart with Honey Whipped Feta, Clementine Vinaigrette, and Pistachios.

Chocolate Stout Cherry Tart with Honey and Vanilla Goat Cheese

Ingredients

  • 1 12 oz. bottle of chocolate stout craft beer I used Samuel Smith Organic
  • 2 lbs. approximately cherries, washed and pitted, stems removed
  • 1 puff pastry sheet
  • 6 oz goat cheese
  • 1 Tbs. honey
  • 1 Tbs. vanilla bean paste
  • handful fresh basil

Instructions

  1. Combine chocolate stout and cherries in a large Dutch oven or pot, bring to a boil, reduce heat to medium low and cook until liquid is reduced and thick and cherries are soft, set aside to cool or refrigerate overnight
  2. Preheat oven to 400
  3. Lay puff pastry on a parchment paper lined baking sheet
  4. Cut a 1/2 inch edge around the pastry without cutting all the way through
  5. Using a fork poke holes all around the inside of the edge you just made - the edge will puff up and the inside will not
  6. Spread reduced cherry/beer mixture over the inside square of the puff pastry
  7. Bake 20 - 25 minutes until pastry is golden and puffed around the edges
  8. Remove from oven and let cool
  9. While tart is baking make the goat cheese by combining goat cheese, honey and vanilla in the bowl of a stand mixer fitted with the whisk attachment
  10. Whip until combined and fluffy, a couple of minutes
  11. Transfer the goat cheese mixture to a zip top bag, cut a small piece of the corner (or use a pastry bag) and pipe onto the chocolate stout cherry tart
  12. Garnish with basil leaves

Let’s put beer in everything!  We’ve got cherries reduced in R. J. Rockers Son of a Peach and some Samuel Smith’s Organic Chocolate Stout whipped into the mascarpone.  I confess – Sara Lee helped out with the chocolate pound cake.

Peach Ale Cherries on Chocolate Pound Cake with Chocolate Stout Whipped Mascapone

Ingredients

  • 4 pounds fresh cherries pitted and stems removed
  • 1 12 ounce bottle peach ale I used R.J. Rockers Son of a Peach
  • 2 tablespoons corn starch
  • 1 8.8 ounce container mascarpone cheese
  • 2 tablespoons heavy cream
  • 1 tablespoon honey
  • 2 tablespoons confectioner sugar
  • 6 tablespoons chocolate stout I used Samuel Smith Organic Chocolate Stout
  • Prepared chocolate pound cake slices I used Sara Lee

Instructions

  1. Combine peach ale, cherries, and corn starch in a Dutch oven over high heat, bring to a boil, reduce to a heavy simmer
  2. Cook until thick and syrupy - I let them go for about 1 hour
  3. Set aside to cool
  4. In a stand mixer fitted with the whisk attachment, combine mascarpone, honey, heavy cream, and sugar.
  5. Beat on medium high until combined and smooth - 1-2 minutes
  6. Add chocolate stout and whip until combined, scraping down sides when necessary
  7. Arrange chocolate pound cake on a plate, top with cheese mixture, then cherries

Recipe note:  You do not need 4 pounds of cherries (although they cook down significantly).  I like to cook a big pot of fruit compote and freeze it to use in the winter.  Obviously there was a lot of cherry mixture left over, but the rest was enough for 4 servings.
