I’m not messing around getting 2018 started.  I realize that January is about half over and I’m just arriving to the party.  What can I say.  I had to decide what to lead this new year with.  How do I want to represent and forecast what’s to come?

I decided for all of us that we need lots of chocolate, obscene amounts of cream cheese frosting, and beer.  So I give you Smoked Porter Beer Brownies.  Happy New Year!

2017 was a crapstorm.  You guys know that.  I have confidence that this year is going to be great and I’m starting with a positive outlook.  Awesome things are going to happen for all of us.  Let’s do this together.  Hello 2018!  Bring on all things wonderful!

Smoked Porter Beer Brownies

Ingredients

  • 1 cup smoked porter beer
  • 3 sticks butter divided
  • 1/2 cup cocoa powder
  • 5 large eggs
  • 2 cups sugar
  • 1/2 cup flour
  • 2 tablespoon vanilla divided
  • 1/8 teaspoon salt
  • 1 cup milk chocolate chips
  • 8 ounces cream cheese
  • 4 cups confectioners sugar

Instructions

  1. Heat oven to 325

  2. Pour beer into a saucepan with fairly high sides, bring to a boil, reduce to a simmer until reduced to a 1/4 cup

  3. When beer is reduced, add 2 sticks of butter and cocoa powder to the same pan and cook over low heat until butter is melted while stirring until the mixture is smooth then set aside to cool slightly

  4. In a medium bowl, whisk together sugar, flour, and salt

  5. Add eggs to chocolate butter beer mixture, whisking them in one at a time

  6. Stir vanilla into the chocolate mixture

  7. Stir the flour mixture into the chocolate butter beer mixture until just combined

  8. Line a 8 x 8 inch square pan with parchment paper or grease the pan with butter then pour in the brownie batter

  9. Sprinkle the milk chocolate chips on top of the brownie batter

  10. Bake for 35 - 35 minutes, cool completely

  11. While the brownies are baking, make the frosting.  Add remaining one stick of butter and cream cheese to the bowl of a stand mixer fitted with the paddle attachment and beat until smooth

  12. Add vanilla 

  13. Add confectioners sugar one cup at a time and beat until smooth

  14. Top cooled brownies with cream cheese frosting 

Recipe Notes

  1. Keep an eye on the beer while it's reducing.  It can boil over - this is why you want to use a fairly deep pan.
  2. You want the beer chocolate butter mixture to cool enough so that you don't cook your eggs when you add them
  3. You will want one stick of butter and the cream cheese softened to room temperature to make it easy to beat for the frosting
  4. After frosting the brownies you can pop them in the refrigerator for an hour or so for the frosting to firm up a bit and it will make them easier to cut

Because who doesn’t love beer, chocolate, brownies, and cookies?  We all know that coffee and chocolate are the best of friends too! Coffee Porter Chocolate Brownie Cookies

Ingredients

  • 1 cup plus 2 tablespoons flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup powdered sugar divided
  • 1 1/2 cups brown sugar
  • 3 large eggs
  • 1/4 cup coffee porter beer
  • 1 teaspoon vanilla extract
  • 4 ounces unsweetened chocolate chopped
  • 4 tablespoons butter
  • 1/2 cup granulated sugar

Instructions

  1. Whisk flour, cocoa powder, baking powder, baking soda, salt and 1/4 cup powdered sugar together in a large bowl
  2. In a separate bowl, whisk together brown sugar, eggs, vanilla extract, and beer
  3. Combine chopped chocolate and butter in a bowl and melt in microwave on 50% power, stirring every 30 - 45 seconds until melted and smooth - about 2 - 2 1/2 minutes total, let cool slightly
  4. Whisk the chocolate mixture into the egg/beer mixture
  5. Fold in flour mixture until combined
  6. Refrigerate at least 1/2 hour or overnight
  7. Preheat oven to 325 and line 2 baking sheets with parchment paper
  8. Put remaining 1/2 cup of powdered sugar and 1/2 cup granulated sugar into separate bowls
  9. Scoop dough out in roughly 2 tablespoon size balls
  10. Coat each ball with the granulated sugar then coat with powdered sugar then transfer to a baking sheet
  11. Bake 15 - 17 minutes, one sheet at a time rotating pan halfway through
  12. Let cool on baking sheet for 5 - 7 minutes then transfer to a wire rack to cool completely

  1. This recipe made 24 cookies
  2. I used a coffee porter from Birdsong Brewing Company
  3. More powdered sugar can be used to dust after baked if that’s what blows your dress up

Creme Brulee Stout Salted Caramel Brownies

Y’all, please forgive me for coming late to the party again.  I’ve been in a funk because we lost the dang Super Bowl.  I’m going to take some inspiration from Luke who gave a fine interview after such an unfortunate loss and try to stay positive.  Seriously, a 17-2 record is something to be proud of!

Remember a couple of years ago when Denver totally blew the Super Bowl from the first snap that went right over Peyton’s head?  It all went south after that, but here they are in 2016 with the Lombardi and the Super Bowl rings.

So, I’m going to have a positive attitude and #KeepPounding because watch out #PanthersNation will be back next year and we’ll be even better!

I thought it would be appropriate to share these brownies with you today because the recipe comes from our own hometown favorite, Amelie’s French Bakery.  Amelie’s is famous for these brownies and for good reason!

Now, these brownies are quite delicious when made according to the recipe, but this was a dark day and we really needed to add some beer.  I’m serious as a train wreck when I tell you that if you can get your hot little hands on some Southern Tier Creme Brulee Stout and put it in these brownies it will be one of the best decisions you ever made.  You could even leave out the caramel -it’s that good.

FULL DISCLOSURE:  The caramel is delicious, but a total headache to make.  I seriously made this recipe 4 times and consulted with one of the Amelie’s pastry chefs before I got it right with this dang caramel.  You need to remove the sugar mixture from the heat prior to adding the cream.  Then you need to SLOWLY add the cream or it will blow up and create on unholy mess on your stove.  Finally, the key to serving them is to freeze them after you add the caramel sauce until they are solid, then run your knife under hot water, wipe it dry, then you can cut them.  And make sure that when you put them in the freezer if you cover them make sure nothing is touching the tops of the caramel or it will totally stick. You will not be happy if this happens.  Trust me.

It was a lot, but I’m trying to keep things real ’round these parts.
