I needed a little sunshine in my life.
We have had some NASTY weather down here in these southern parts and there is more on the way. We got hit with an ice storm last night and everything is currently melting only to re-freeze tonight.
Then is is going to get very cold with more nastiness for the upcoming weekend.
Now, I know this is nothing compared to what our friends up north are experiencing. But this is the south. We are a bunch of weenies when it comes to cold weather. One flake of snow or drop of ice turns us into weeping, teeth-gnashing, whiny crybabies.
And by we I mean me. So I needed something happy, and pretty, and sunshine-ey to pick me up.
So I made this frittata. Besides being happy, and pretty, and sunshine-ey, I was able to clean out my fridge and pantry. You can throw just about any old thing in here. I had leftover prosciutto wrapped roasted asparagus, some broccoli, a few potatoes, goat cheese, kale that had seen better days, and onions. In the words of Guy Fieri — everybody in the pool!
Doesn’t that just cheer you up?

I love frittatas. I learned this Lavoisier law early in life: “Nothing is lost, nothing is created, everything is transformed.” That was my grandmother teaching me that every leftover can be transformed into something new and delicious. It was usually frittatas. lol As for your weather complaining… no comments! lol 😛 Maybe we should switch for a week. You come to the North and I go to the South!
So true, Olivia. Transforming leftovers is so much more interesting and fun. Frittatas are so versatile too! I know! I know! I have no business complaining about our weather when it is so bad for you up in the North. Why don’t you just come on down for a visit? Then neither one of us will have to suffer all that snow! 🙂
It looks soo good! Love frittata and this one is loaded with wonderful ingredients!
Thanks Mira!
Frittatas remind me of lazy weekend mornings in and brunches with the whole family served with those cute green side salads and acidic vinaigrettes. This sure is a great way to bring some sun back into your life 🙂
Thanks Medha! We were working at home because of the ice storm. It was kind of like a lazy weekend – except for the work part. At least we got to stay in our PJ’s!
I love frittatas! This looks amazing! Sorry to hear about all the cold weather, believe it or not I would LOVE a snow day! We get nothing but sun here in southern California and lately its been WAY too hot!
Thanks Mariah! I have to say I’m jealous of all your heat and sunshine. It’s 16 degrees here today and dropping!
It’s been so cold here lately too! Frittatas are the perfect way to bring some sunshine our way! Looks delicious!
Thanks Kelly. I am so ready for Spring!
