I know it is still summer, but I love anything pumpkin.
And cream cheese frosting? Yes please!
I was thinking about my Gram the other day. I inherited her recipe box and keep it in my kitchen where I see it every day.
Her dad made it for her when she married my Pap.
He literally made it with his hands.
I mean, would you look at this thing! It doesn’t have any screws or nails. It’s all fitted together, like tongue and groove?
Is that what it’s called?
It just has some hinges for the top to open and close.
Do you see that date? December 28, 1932. OMG! That was FOREVER ago!
So I got to thinking about spending holidays with my family during my childhood. I had the BEST grandparents. I remembered these pumpkin cookies with cream cheese frosting that she used to make. I LOVED those things.
I was looking at the recipe box and thinking about pumpkin cookies and thinking…..
Maybe it’s there?

OMG! There it was!
And I was kind of in a baking mood. Remember the car situation? Yes. Stress sends me straight to the kitchen.
I’m pretty sure the recipe was some modification of a Libby’s Pumpkin Cookie recipe. I might be wrong, but the recipe card could have been in the box since 1932!
I LOVED going to visit my grandparents. My sister Molly and I spent weeks with them every summer.
I’m so sure my mom was totally happy about that too.
Because Molly was a brat. She still is.
Just kidding. Molly is awesome.
I just didn’t always think so when I was 8.
And I know that these things are absolutely ridiculous. But I have had a ridiculous couple of weeks and I was feeling ridiculous. So these Pumpkin Whoopie Pies are HUGE. And totally STUFFED with cream cheese frosting.
It’s ok. Be ridiculous with me. See that little spot where I got frosting on the side of the whoopie? Go for it.
BTW. My friend Jennifer calls them Whoopsies! LOL
And Jennifer says they could be smaller. So you can make them that way too if you want. But I’m not sure why you would!
Pumpkin Whoopie Pies with Cream Cheese Frosting
Adapted from Libby’s Pumpkin Cookie Recipe
Ingredients:
For the cookies
1 cup white sugar
1/2 cup brown sugar
1 can Libby’s Pure Pumpkin
1 stick unsalted butter
3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
For the frosting
1 8 0z block of cream cheese
1 stick of unsalted butter
1 cup of confectioner’s sugar
1 teaspoon pure vanilla extract
Instructions:
For the cookies
Preheat oven to 350 F.
Mix together sugar, brown sugar, butter and pumpkin. In another bowl sift together flour, baking powder, baking soda, salt and pumpkin pie spice. Add dry ingredients to the pumpkin mixture and combine. Drop on a cookie sheet covered with parchment paper (I used an ice cream scoop).
Bake 18-20 minutes or until a toothpick to the center comes out clean.
Note: if you want to make them smaller adjust your cooking time.
For the frosting
Beat cream cheese, butter, vanilla and confectioner’s sugar together until smooth.
To assemble
Frost the bottom side of one cookie and top with another so that the bottom sides of each cookie sticks to the frosting.

Those look so good! I’m a pumpkin fan as well! I’m going to go get pumpkin candles, creamer and anything I can think of the first week of September! Hope yesterday went well!!
