I know I say this every Thursday, but holy happy almost weekend, y’all!

How’s your week been going?  The weather here has just been absolutely beautiful and it makes it really difficult to stay inside.  I’ve got spring fever and I’ve got it bad!  I want to spend every single waking minute outside in the sunshine – especially while it’s super nice and not to hot or humid.

Don’t worry.  That’s coming too.  Days of melting makeup and frizzy hair are in my future.  But for now, we’ll take the gorgeous spring weather while we have it!

Speaking of spring.  Thank goodness Game of Thrones is back!  OMG.  If you don’t watch it, you totally should.  Start at the beginning.  And while you’re at it, check out Sons of Anarchy.  Oh!  And Shameless. William H. Macy is awesome in this hot mess of a family!

I got a bit distracted there with my TV love.  So, do you have any big plans for this weekend?  Chris is going to West Virginia with a bunch of his friends for a camping and four wheeling adventure, so I’ve got the joint (and dogs) to myself this weekend. #bachelorettepadweekend

If you’re asking why I’m not going on this vacation (Chris’ term), then you obviously haven’t met me. I’m all about Dancing with the Stars, General Hospital, Nashville, manicures/pedicures, shoes, eyeshadow, lipstick, and all things pink. Sigh….

I do not belong in the woods, sharing a cabin with 20 people, and/or anywhere near mud unless it’s in a spa.  It’s important to know your limitations.

Fortunately, I can stay home with my dogs and think about all things spring like sunshine, upcoming Cinco de Mayo parties, and Mexican Street Corn.  Can you believe I’ve never had this deliciousness before?  We decided that we needed Mexican Street Corn in our lives and with the upcoming Cinco de Mayo holiday we had to make this happen now.  Dudes.  It’s totally amazing.  I have zero idea what in tarnation has kept me from doing this for the past 29 years (because that’s how old I am in my imagination), but it’s going to happen for the next 29!

Mexican Street Corn

Ingredients

  • 4 ears of corn
  • 1 tablespoon olive oil
  • 1/4 cup mayonaise
  • 1/4 cup sour cream
  • 3/4 cup cojita cheese divided
  • 1/2 teaspoon chili powder
  • 1/4 cup cilantro leaves chopped
  • lime wedges for serving optional

Instructions

  1. Heat grill or grill pan over high heat
  2. Brush corn with olive oil
  3. Grill corn on all sides until charred, rotating often - 8 - 10 minutes
  4. Transfer mayonaise, sour cream, 1/2 cup cheese, chili powder to a large serving bowl and stir to combine
  5. Add cooked corn and toss to coat also using a large spoon to make sure all the corn is completely coated
  6. Sprinkle with remaining cheese and a few dashes of chili powder
  7. Garnish with cilantro and serve with limes, if using

    It’s been cold and rainy here this week, so I’m hoping spring shows up next week! Mexican street corn is my absolute favorite, Rachelle! I haven’t had it in such a long time, so now I’m totally craving this. I love your zesty version!

    Yes! I love Mexican street corn, and this reminds me that I totally need a batch of this soon. Perhaps this weekend. It’s been a rough week here in the Spiced house…so Thirsty Thursday can’t get here soon enough. Wait…that’s today! 🙂 Have fun on your weekend alone. Watch lots of tv. Get lots of sleep. And drink a beer or two in there somewhere!

    Haha…sounds like you are in for a lovely weekend. And, yes, pink is totally awesome. I’ve never actually watched Game of Thrones, but Son’s of Anarchy? YES!! Love that show. All finished now. There are so many shows that we watch, it’s unreal. Hard to keep up with them all, but someone has to do it, lol. We have a lot of tv watching to do on the weekends, that’s for sure. Now, onto this recipe – I love corn and this one looks wicked! I just wanna dive right into that bowl and eat every single one myself. Have a great weekend! I’m sure you and your furry children will have a blast 🙂

    Being in a cabin with 20 people ain’t my thang either, Rachelle, so I don’t blame you for staying home!! And I have seen all of Sons of Anarchy (loved it!), but haven’t seen Game of Thrones or Shameless… I’ll have to check it out. But you need to check out The Outsiders (Opie from Sons of Anarchy is a main character). Okay enough TV – CORN! Dudette, I can NOT believe this was your first time trying Mexican Street Corn!!! What the whaaaat?! I guess better late than never! Mexcian street corn is the freggin’ jaaaaam! Yours looks fabulous, girlfriend! I’ll take 100 ears. All.For.ME! Cheers, dear!     We’re in FL visiting my husbands parents and I was literally JUST telling them about Mexican street corn (they had never heard of it)! I told them basically what’s on it, and pretty much said it’s like candy – it’s just SO good! I love your addition of sour cream to give it that wonderful tang. That’s a definite must try next time!

    My favorite part about grilling season is corn. It taste so good when it’s roasted over a hot fire, and when in slathered in mayo, and sour cream – I can’t help but eat two servings.

    I will take that big bowl of Mexican street corn from you and run as fast as I can. Then I’ll bring your bowl back to you…empty! lol! YUMMMMMMMY!! BTW, that’s totally cool about you not liking camping BUT you better get in the pimpin’ camper when I come pick you up. It’s got a full bathroom in it so you can take a shower and do your hair and makeup. Oh yeah, bring your corn with you too 😉

    I love spring and want to be outside too! It’s hard to stay inside and work. At school everyone is volunteering to do recess duty….that never happens 🙂 This Mexican street corn looks lovely…..this is a perfect weekend for grilling!

    I have seriously been wanting to make Mexican street corn, especially after seeing all these Chef Aaron Sanchez commercials for cotija cheese! Haha!! This recipe (and his recipes) has me seriously craving!
