I discovered this little gem in one of my raw food vegan cookbooks and have wanted to make it for a while. It finally happened. Yay me!

Sorbet recipe barely adapted from Raw Food Real World, page 254
Note: you can chill a can of coconut milk in the freezer for about an hour and it will separate – otherwise if you have a can that has been sitting in your pantry for several days it should be separated – DON’T SHAKE IT!
Note: This sorbet is delicious, but melts really fast! Keep it in the freezer until ready to serve and I recommend chilling your serving dishes too!
