Fried Green Tomato, Bacon, Pimento Cheese Burgers

Sometimes you just have to eat a big nasty burger.

And not feel bad.

 

 

Did you have a good day?

 

 

If not, eat one of these and you will feel a thousand times better!

 

 

I mean, really?  How can you go wrong with a hamburger topped with bacon, pimento cheese and a fried green tomato?  You can’t, I say.  You really can’t.

 

 

I started with some cheese.  OF COURSE!!!!!   I used mostly shredded extra sharp white cheddar with some shredded orange (yellow?) cheddar, mayo and pimentos.  I just threw the pimentos into the food processor, then added the cheese and mayo. OMG!  It was delicious!

I put that in the fridge to chill out while I made the burgers.  Simple enough.  Except I took a pound of ground chuck and made exactly TWO burgers!  I know.  Outrageous.  I recommend if you are normal to make four.

I didn’t do a lot to the meat.  I just added some chopped onion, garlic, Worcestershire sauce, salt and pepper.  Formed them into burgers and made a little dent in the middle.

That’s what my friends at the Food Network tell me to do.  I love you guys!

 

 

Apparently it keeps the burger from rounding up on the top.  It is true.  Trust me.

The fried green tomato.  I bought all of these at the farmer’s market on the same day, but they turned red at different times. Since I was only making TWO GLUTTONOUS BURGERS I used the last one that was still green.

 

 

We talked about the fried green tomato before.

 

 

That is because it is delicious.

 

 

So go right now and make some of these!

Fried Green Tomato, Bacon, Pimento Cheese Burgers

 

For the Pimento Cheese:

Ingredients:

6 oz extra sharp white cheddar cheese, shredded

4 oz extra sharp orange/yellow cheddar cheese, shredded

1/2 cup jarred pimentos

1/2 cup mayonaise

 

Instructions:

Put pimentos in food processor and pulse a few times.  Add cheese and mayonaise and pulse until combined.  Store in fridge until ready to add to burgers.

 

For the burgers:

Ingredients: 

1 lb ground chuck

1/2 vidalia onion, diced

2 cloves garlic minced

1 tablespoon Worcestershire sauce

1 tablespoon olive oil

salt and pepper

 

Instructions:

Combine all ingredients and form into either 2 or 4 patties.  Use your thumb and make an indentation in the middle of each burger.  Drizzle with olive oil.  Grill (if making 2) about 8 minutes on each side.  When almost done on second side add pimento cheese and cook about 2 minutes.  Remove from grill.

 

For the Fried Green Tomatoes:

Ingredients:

1 green tomato, sliced about 1/4 inch thick

salt

pepper

4 tablespoons yellow cornmeal

4 tablespoons flour

3/4 cup buttermilk

1 egg

1/4 – 1/2 cup of olive oil

 

Instructions:

Salt and pepper the tomato slices.  Mix together cornmeal and flour in a bowl.  Beat egg and buttermilk together in another bowl. Heat oil in cast iron skillet to medium- high.  Dip tomato slices in buttermilk mix, then in cornmeal mix and repeat.  Add tomato slices to the oil and cook until golden brown on one side then turn and cook the other side.  Drain on paper towels.

 

To Assemble:

Additional Ingredients:

2-3 slices cooked bacon

2-4 onion rolls, toasted (or any other kind you like)

Put burgers topped with melted pimento cheese on each bun, top with 1 fried green tomato, and 1- 1/2 slices of bacon.  Serve immediately and enjoy!
