Baked Brie and Pesto

We’re going to just ease on down the road into this Monday.

I don’t know about y’all, but work last week was brutal for me and my weekend was about 5 days to short for my recovery.

I started out Sunday with a day drinking beer judging event from Women’s Brew and ended it with more day drinking a pedicure and dinner with friends.

Seriously, I had so much fun!  So much fun that I’m sharing not so much a recipe as a fun flavor combo that makes a great appetizer or gluttonous dinner for one.  Do it!  The fat kid inside you will be so happy!

Baked Brie and Pesto

Ingredients

  • 1 baguett cut into 1/2 inch slices
  • 1 round package of brie
  • 1/2 cup prepared pesto
  • basil leaves for garnish if desired

Instructions

  1. Preheat oven to 350
  2. Unwrap brie and transfer to a small baking dish
  3. Bake brie for 12-15 minutes - if you cook it too long the cheese will explode - trust me
  4. Transfer to serving plate
  5. Top with pesto
  6. Arrange baguette slices around baked brie
  7. Garnish with basil, if using

    Good thing the weekends end sometimes just so you can take it easy! Whew!!! Sounds like fun though. This baked brie looks so delicious!

    So many recipes with pesto these days!! I feel left out, I need to start all over again my recipe plans for the next few weeks

    I am literally drooling over this. We always have baked brie at Christmas, but now I am wondering why we don’t have it the rest of the year too.
    I love that you have added pesto to yours.

    You have no idea how much I love pesto, Rachelle. And, I found a vegan brie that’s exactly like the dairy kind. I can’t even tell you how happy this combination makes me. Oh, day drinking can be fun once in a while. 😉

    Oh I LOVE this combination, Rachelle! Brie cheese is so freggin decadent and delicious- the fat kid in me TOTALLY wants to hoard this and devour it ALL.By. Myself! Crazy, but all the times I’ve had brie cheese I’ve never had it with pesto! Whaaaat??? I’m SO going to change this, pronto! Glad to hear you had such a good (although too short) weekend!     omg you are killing me with this recipe… brie and pesto are two of my favorite indulgences. i was thinking about inviting friends over to make this for them, but seriously no, i really dont need friends to help me finish this…
