Happy Monday, friends!  Did y’all have a fantastic weekend?  We had some beautiful weather here in the Carolinas and we happily took advantage of it.  We got out our bikes and went for an 8 mile ride on one of our local greenways.  Y’all will totally be relieved to know that I made it through the whole ride without crashing. You may remember that I have some issues with balance and riding bikes.

Enough about my embarrassing bike crashes and let me tell you how absolutely gorgeous the greenway was – keeping in mind that I missed a lot of wildlife and flora due to the fact that I cannot take my eyes off the trail for more than a few seconds or I’ll end up in the bushes, pond, on a porcupine, etc. Anyhoo, there were yellow wildflowers blooming everywhere, ducks were swimming in the water, and turtles were chillin’ on rocks in the sunshine.  It was a great day and I hope it’s safe to say that spring has sprung!

Since it’s Monday and we’ve established that Mondays blow, we’re going to ease into this week like an easy Sunday morning – even though I have to suit up and go to work. Womp Womp.  On the positive side of things we’re still continuing this month-long celebration of all my favorite things for my birthday and I guess we can include some St. Pat’s celebrating too.  I’ll share.

The theme today is pub food.  I mean, seriously.  Who doesn’t love a burger?  We (and I don’t know why I say we when it’s really just me) have stuffed some ground lamb with crispy bacon and feta cheese and topped it with some super easy tzatziki.  Toss this on an onion roll and throw in some fries and all is right with the world.

Bacon and Feta Stuffed Lamb Burgers with Tzatziki

Ingredients

  • 4-5 slices bacon
  • 1 pound ground lamb
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • Pinches of each:
  • salt
  • white pepper
  • fennel pollen
  • cinnamon
  • 8-10 ounces feta cheese
  • Onion rolls
    Tzatziki Sauce
  • 1 cup plain greek yogurt
  • 1 cucumber, peeled, seeded, and grated, drained
  • 1 clove garlic, minced

Instructions

  1. Heat skillet on medium and brown bacon until crispy - reserve bacon fat
  2. Mix together lamb, onions, garlic, spices,bacon, and feta
  3. Form into 4 burger patties
  4. Reheat bacon fat in skillet
  5. Cook burgers about 5 minutes each side
    Tzatziki
  1. Combine all ingredients and chill until needed
  2. Assemble each burger on a bun and top with tzatziki, serve immediately

  1. Lamb and me like each other a lot. Wait, let me rephrase that…me, lamb, and burgers like each other a lot. Combine all of them together and it’s a party that I never want to end. I had lamb for dinner last night too so we must be dinner soul sistas or something. I have some local farm lamb roast left in the freezer, I’m gonna grind some up and make your burgers next weekend. YUMMMMMMYY!!! BTW, I win for worse pics today. Just saying…;)

  2. I’m starting to think we should just declare every month your birthday month, because if this is the food you make, I’m thinking I NEED it all the time! Seriously I love good Pub food, and this burger is everything! I love lamb… and bacon. and feta. at tzatziki… so you already know how I feel about this beast. LOVE AT FIRST SIGHT. Seriously, this looks absolutely delicious! One of these days the four of us should go on a bike ride. You and I can crash into shhhh together, even though you were super graceful on this ride.   3. This is incredible! I love the way this sounds! Definitely a way to make Monday a bit better if you ask me. I’m crazy about burgers anyway so this would make any day better haha!
